Bretzel Rolls Ingredients:

DOUGH:

  • 1 1/3 cups warm water
  • 2 tablespoons warm milk
  • 2 1/2 teaspoons active dry yeast
  • 1/3 cup light brown sugar
  • 2 tablespoons butter, melted
  • 4 cups all-purpose flour kosher salt or pretzel salt

PARBOILING LIQUID

  • 2 quarts cold water
  • Baking soda (1/2 cup)

How to make Bretzel Rolls:

1-Take a medium bowl if using a machine, or in the medium bowl of a standing electronic
blender sated with a dough hook, blend a 1/3 cup of the warm water (100-112 degree)
with the yeast.

2-The remaining cup of warm water with milk or powder milk, sugar, mixed butter and
swirl to mixed the sugar.
Flour and blend on dough cycle or medium speed.

3-Remove dough from bread machine once it forms a nice a firm, pliable dough ball.
Again flour if necessary.
Turn dough out onto a lightly floured table and knead for 1 min.
Roll into a 24 inch big log and cut into 5 even pieces.
Cover dough with plastic and a damp cloth and let sit for 8 min.

4-Form knots and arrange on a lightly floured surface about a foot apart and cover with
lightly oily plastic wrap.
Let the pretzels rest for an extra 25-35 min.

5-Again heat the oven to 415-435°.

Lightly oil 2 cooking sheets.
Take a medium stockpot; bring the cold water to a rolling boil and baking soda.
Two rolls into the boiling water.
Sprinkle lightly with salt.

6-Arrange rolls on the oily cooking sheets and cook on the top and mid racks of the
microwave for 5-12 min.
Let rolls refrigerator on the cooking sheets for about 4-6 minutes, and then transfer them
to a rack.
