Lemon Loaf Cake



  • /2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 cups flour
  • 1 t. salt
  • 1 t. baking powder
  • Zest of one lemon


  • juice of one lemon
  • 1/4 to 1/2 cup sugar


1. Preheat oven to 340. Mix B ingredients together and set aside.
2. Mix A ingredients together in the order listed. Bake for 30-40 minutes in wellgreased standard-size loaf pan or two smaller loaf pans. Do not fill more than halfway.
Bake until center is puffed high and top is lightly browned.
3. Cool for 10 minutes. Remove loaves from loaf pans. Cool another 10 minutes.
Return loaves to loaf pans and, using a toothpick, poke holes all around the tops of the loaves. Pour B over the tops of the loaves and into the holes. Let cake sit in loaf pans for 10 more minutes to absorb the lemon topping.

Note: 1) These make great gifts. This recipe doubles easily.
