Spinach Waldorf Salad recipe
how to make
- 1/2 cup chopped or sliced nuts or seeds (pepita, almond, walnut, pecan, hazelnut, pine)
- 1/4 cup sugar (optional)
- 1/4 t. coarse salt (optional)
A = 2 cup mayonnaise or plain (or sweetened) yogurt or a mix of both 1-3 T. sugar 1 t. lemon juice
B:B1 bunch spinach leaves (or lettuce), washed and dried 1 cup thinly sliced celery 3 tart apples, cored and thinly sliced 1 cup grapes, halved, or 1/2 cup raisins
If you want to candy your nuts, melt sugar over low heat in a pan. Add nuts. Stir tocoat. Remove to parchment paper, sprinkle with salt, and cool. You can also just add thenuts right to the salad.
2. Whisk A ingredients together to make dressing.
3. Mix B ingredients in a large bowl. Coat with dressing and toss. Sprinkle with candied nuts. Place atop of a bed of spinach or lettuce, and/or mix the leafy greens right into the salad.
Note: 1) I often leave out the leafy greens and eat this salad just like a dessert.
