Sweet and Salty Summer Salad



Ingredients:

A

package instant ramen noodles
1 cup walnuts, almonds, or pepitas, whole or sliced
1/4 cup butter
1/4 cup sugar
1 head lettuce, torn
1/2 cup chopped green onions
2 cups fresh sliced strawberries, fresh blueberries, or one can drained mandarin oranges

B

1/4 cup vegetable oil
1/4 cup sugar
2 T. red wine vinegar
1 t. soy sauce
1/2 t. salt
dash of pepper

Instructions:

1. Crush ramen noodles while still in package. Open package and discard seasoning packet. Melt butter in small sauce pan and add crushed noodles. Cook over medium heat until noodles are golden brown. Set aside.
2. Melt sugar slowly on low heat in the same pan. Add nuts and coat with syrup. Cook until golden brown. Set aside to cool.
3. Mix B ingredients to make a dressing. Adjust seasonings to taste. Set aside.
4. Mix lettuce and onions in a large salad bowl. Toss with dressing. Top with fruit, crunchy noodles, and nuts. Serve immediately.
