  • 3 medium tomatoes, quartered
  • 1 T. butter
  • 1 T. oil
  • 1 thinly sliced medium onion
  • 3 oz. tomato paste
  • 1 t. basil
  • 1/2 t. thyme
  • 1.5 cups chicken stock
  • 1 t. salt
  • Sugar and paper


  1. Heat butter and oil and sauté onions until tender. Add tomatoes, paste, and spices.Simmer on low heat about five minutes.

    2. Mash tomatoes slightly. Add broth. Bring to a boil. Reduce heat and cover andsimmer for 30 minutes.

    3. Process soup in a food processor and strain, if desired.
