White Chicken Chili recipe


  • 1 lb. cooked white beans
  • 6 c. chicken broth
  • 2 cloves minced garlic
  • 2 large onions, chopped
  • 1 T. olive oil
  • 8 oz. canned green chilies
  • 2 t. cumin
  • 1 1/2 t. dried oregano
  • 1/4 t. ground cloves
  • 1/4 t. cayenne pepper
  • 1 T. miso paste
  • 4 c. diced, cooked chicken
  • 3 c. grated cheese


1. Boil beans, broth, garlic, and half of the onions in a large soup pot. Reduce heat and continue simmering.
2. Sauté the rest of the onions in a little oil. Add chilies and spices. Add to the large soup pot and simmer for one hour.
3. In the last fifteen minutes of cooking, add miso paste, chicken and grated cheese.

Note: 1) You may want to add a dollop of sour cream to each bowl before serving.
2) Serve with a thick, crusty bread
