Zucchini Cobbler Recipe

Ingredients

  • 8 cups peeled, chopped zucchini
  • 2/3 cup lemon juice
  • 1 c. sugar
  • 2 t. cinnamon, divided
  • 1/2 t. nutmeg
  • B
  • 4cups flour
  • 2 cups sugar
  • 1/2 cups soft butter

Instructions

  1. Grease a large baking dish. Simmer the zucchini in medium sauce pan in the lemon juice for about 20 minutes. Add sugar, 1 teaspoon cinnamon, and nutmeg. Cook for one more minute.

    2. Preheat oven to 375. Mix B ingredients to make a soft dough. Stir 1/2 cup of dough into zucchini mixture. Divide the remaining dough and press 1/2 of it into the bottom of the casserole dish. Top with zucchini mixture. Sprinkle the  remaining dough on top. Top with remaining teaspoon of cinnamon. Bake 40 minutes.

Note: 1) Serve warm or cold with ice cream or whipped cream.
