Zucchini Cobbler Recipe
How to make Zucchini Cobbler
- 8 cups peeled, chopped zucchini
- 2/3 cup lemon juice
- 1 c. sugar
- 2 t. cinnamon, divided
- 1/2 t. nutmeg
- 4cups flour
- 2 cups sugar
- 1/2 cups soft butter
Grease a large baking dish. Simmer the zucchini in medium sauce pan in the lemon juice for about 20 minutes. Add sugar, 1 teaspoon cinnamon, and nutmeg. Cook for one more minute.
2. Preheat oven to 375. Mix B ingredients to make a soft dough. Stir 1/2 cup of dough into zucchini mixture. Divide the remaining dough and press 1/2 of it into the bottom of the casserole dish. Top with zucchini mixture. Sprinkle the remaining dough on top. Top with remaining teaspoon of cinnamon. Bake 40 minutes.
Note: 1) Serve warm or cold with ice cream or whipped cream.
